Try this delicious, light and low-calorie meal to kickstart your diet!
The only cooking part required is preparing some basmati rice, but that’s super easy. Just follow the instructions on the package and when your rice is ready, mix it with some more few ingredients. Your lunch is ready in just a few minutes! I usually double (and sometimes even triple) the recipe since it’s yummy the other day, too! And you’ll be surprised to find out that you’re not going to be the only one around liking it! As per the mayonnaise, I skip that part most of the times, to make it even lighter, and instead I add some olive oil while the rice is cooking. You can try it either way.
Ingredients
- 1 cup cooked basmati rice at room temperature
- 1 small can tuna (about 4 ounces or 100 gr), broken up with a fork
- 1 tablespoons ketchup
- 1 tablespoon mayonnaise (optional)
- 1 large pickle, diced
- 1-2 tablespoons capers
- 4-5 cherry tomatoes diced
- Italian parsley, chopped
- salt & pepper
Mix the basmati rice with the ketchup (and the mayo-optional). Add all ingredients and stir gently with a fork. If you plan on saving some for later, make sure to add the tomatoes freshly diced, right before serving.
