Happy Halloween! Here is a delicious snack for right after you get back from Trick or Treating! Just toss all your favorite pizza toppings into a bowl, add some flour, oil and an egg, and you will have your mini pizzas ready in 20 minutes! I’m sharing my favorite toppings, but you can add anything you like – whether it be sun dried tomatoes, mushrooms (just saute those before), onion, bacon and any kind of yellow cheese you have in the fridge, for example cheddar, Gruyere, Gouda, or a combination. The kids approved!
TIP: I freeze the leftovers immediately into batches of two into a Ziploc. For a school lunch, I just pop the Ziploc into the lunch box and it’s all defrost and ready at lunch time.
INGREDIENTS for about 20 mini pizzas
- 1 1/2 cups self-rising flour
- 1 egg
- 1 1/2 cups grated yellow cheese (I used Gouda and a little Parmesan)
- 5 slices ham, chopped
- 1/2 green pepper, chopped
- 1/4 cup olive oil
- 1 1/2 tablespoons ketchup
- olives, chopped (such as Kalamata)
- 1/4 teaspoon dried oregano
- 1/2 teaspoon salt
- pepper
Preheat oven to 360 degrees F (or 180 degrees C). In a large bowl, beat the egg. Add all ingredients and stir with a fork until combined. Shape dough into small balls, approximately 1 1/2 inch diameter (about 3.8 cm). Flatten with your palms, place on a baking sheet lined with parchment paper and press with your finger in the middle. Bake for 20-25 minutes. Let cool slightly.
Halloween decoration on the Mini Pizzas: I cut the pumpkin and cat shapes off some paper cups that were left over from last year, and taped them on skewers.
