Crunchy & Festive Fall Salad

If you would like a salad to go with all the flavors and colors of this time of year, this is the one to try! The crunchy and refreshing ingredients will compliment any meat or fish and even your Thanksgiving turkey. Thinly sliced green cabbage and apple, combined with carrots and pomegranate seeds, and finally topped with the easiest dressing ever: and you have a winner!  Just make sure that all your ingredients are very fresh, firm, and of the best quality!

INGREDIENTS

  • 1/2 small green cabbage thinly sliced
  • 2 large carrots, peeled and shredded
  • 1 large apple (I used Red Delicious), very thinly sliced into wedges and cut in half crosswise
  • 2/3 cup pomegranate seeds

FOR THE DRESSING 

  • 1/4 cup Greek Virgin Olive Oil
  • 1 1/2 tablespoons mayonnaise
  • the juice of half lemon
  • 1/2 teaspoon salt

To prevent your apple from browning, prepare a bowl with 1 1/2 cups of water and the juice of half a lemon.  Keep the apple wedges in the mixture of water and lemon juice until it is time to serve the salad. Skip this step if you are planning on serving your salad immediately, but keep the apple slicing as your very last step.

In a large serving bowl, combine cabbage, carrots and pomegranate seeds.

Make the dressing by whisking all ingredients together.

Just before serving, pour the dressing over your salad and combine all ingredients.

Drain the apples from the water/lemon bath and gently pat them dry.

Add the apples and combine softly will the rest of the ingredients.
